Author of “The China Study,” to speak at UVSC
T. Colin Campbell, Ph.D., author of “The China Study,” and
respected nutrition and health researcher will speak October 3 at 7
p.m. at the Grande Ballroom in the Sorensen Student Center.
Dr. Campbell is a Jacob Gould Schurman Professor Emeritus of nutritional biochemistry at Cornell University. He has received more than 70 grant-years of peer-reviewed research funding and authored more than 300 research papers.
“The China Study” is the culmination of a 20-year partnership between Cornell University, Oxford University and the Chinese Academy of Preventive Medicine. The book is based on the findings from the most comprehensive nutritional study ever undertaken, conducted in rural China, on the relationship between diet and the risk of developing disease. The project produced more than 8,000 statistically significant associations between various dietary factors and disease. Campbell details the connection between nutrition and heart disease, diabetes and cancer.
“I became so enthusiastic about the research findings that I desired to meet the author, just to shake his hand,” said George Murdock, founder of the China Study Advocacy Group, local Utah sponsors that combined together to bring Campbell to the area. UVSC and BYU’s Student Health Center and Y Be Fit Wellness Program are among the sponsors.
“It is not a diet book; it is research on lifestyles and diets. I read the book in about a day, and it is now a major part of my life,” Murdock said, “Dr. Campbell explains in his research that the most likely solution to the main diseases of western affluence, such as cancer, diabetes, obesity and heart disease, is at the end of the fork, what is in your diet or breakfast, lunch and dinner.”
“The book is really timely for us right now with all of the prominent diseases that are becoming common around us,” said Rogan Taylor, physical therapist, owner of Spine, Orthopedic and Sports Clinic, a sponsor of the event. “I would encourage anyone interested in staying healthy to come hear Dr. Campbell and read the book.” Admission is free and open to the public. Campbell will also speak at BYU in the Wilkinson Center Garden Court October 4 at 12 p.m.
